Socată (Elderflower Cordial)

1. Socată with caramelized sugar
and vinegar

Ingredients:
5 liters water
3 large umbels
500g sugar
2 lemons, sliced
75g vinegar

A day later the dark socata is joined by a plain socata. The drink on the left has just been stirred.

Here's the recipe for the clear socata again (no caramelized sugar, no yeast):

Ingredients:
5 liters water
2 large umbels
500g sugar
juice of four lemons and rind of two lemons

What you see on the right is a 3-liter jar, and so I have adapted the quantities. This time I have followed the recipe.

I have spotted only two errors in this book (socada instead of socata, and smeura instead of zmeura), so rest assured: the book is well researched and reliable!
